  MEAT LOAF WITH A MEXICAN TWIST

Ingredients:
1 lb. lean ground beef
1 sleeve crackers, finely crushed
1 egg
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic
1 C. salsa sauce ( as hot or as mild as you like )
1 tbs.. prepared mustard ( optional )
old cheddar cheese, grated
Instructions:
Mix the ground beef with the cracker crumbs, egg, salt, pepper, garlic and 1/2 C. of salsa sauce. Shape into a loaf and put between two sheets of waxed paper. Roll out, keeping a rectangular shape, until it is about 1/4" thick. Spread grated cheese on top, leaving about 1/4" on all sides. Roll the meat up jelly roll style, securing all open ends. You should be left with a loaf shape. Place in metal loaf pan and bake at 350º. for 45 minutes. Drain off excess fat. Spread mustard over the top of the loaf, if desired. Spread on the remaining salsa sauce. Bake 15 minutes longer. Let set 10 to 15 minutes before cutting into slices.
