4 medium Carrots, shredded
1 tbsp Chopped fresh parsley
1 tbsp Basil
1 tbsp Scallions
3 tbsp Lemon juice
2 tbsp Safflower oil
Salt & pepper
Instructions:
Combine all ingredients in a mixing bowl, toss & serve.
