  CHICKEN AND APPLE PECAN STUFFING

Ingredients:
4 to 6 boneless skinless chicken breasts
3 Tbls. butter
1/2 C. chopped onion
1/2 C. chopped celery
1 C. chopped apple about 1 apple
1/3 C. applesauce
1/4 C. chopped pecans
1 box Stove Top stuffing mix 6 oz.
1/2 C. water
1 can cream of chicken soup Healthy Request, or low fat
Instructions:
Wash chicken breasts and pat dry, place in crock pot. Melt the butter in a skillet over mediumlow heat and sauté the chopped onion, celery, and apple. Add pecans, water, applesauce, cream of chicken soup, and stuffing mix. Mix together, spoon over chicken in the crock pot. Cover and cook on low for 6 to 8 hours.
