Ingredients:
4 slices bacon
1 small onion
8 to 10 medium potatoes
salt and pepper to taste
2 eggs
3 Tbsp. butter or some bacon grease
sour cream
Instructions:
Sauté bacon and onion together. Grate the potatoes. Add salt, pepper, eggs, and butter or bacon grease and pour into a greased casserole. Bake at 350º for 45 minutes. Top with sour cream.
