Ingredients:
4 chicken breast halves, boneless
16-oz. can italian stewed tomatoes, cut in bite sized pieces
4-oz. can sliced mushrooms, salt free
1 medium onion, sliced in rings
2 tsp. italian seasoning
2 tsp. chopped garlic
salt to taste
pepper to taste
shredded mozzarella cheese, fat free
Instructions:
Place chicken in baking dish. Top with tomatoes and their juice, mushrooms, onions and seasonings. Cover tightly with foil and bake at 350 for 1 hour or until chicken is done. Remove from oven and sprinkle with mozzarella. Cover with foil until cheese melts.
