Ingredients:
1 1/2 pounds London broil or lean beef to 2 pounds sliced or cut into bite-size pieces
1 1/2 C. match stick cut carrots
1 large green pepper cut in 1 inch pieces
1 C. dried pineapple chunks about 3 oz.
2 Tbls. dry minced onions to 3 Tbls. or 1 chopped onion
1 tsp. ground ginger
1/4 tsp. red pepper to 1/2 tsp.
1/2 C. apple juice
1/2 tsp. garlic powder
1 packet dry onion gravy mix
1 package frozen oriental vegetables slightly thawed, optional
Instructions:
Place meat, carrots, green pepper, pineapple, and onions in crock pot 3 1/2 quart or larger. Combine ginger, red pepper cayenne, juice, garlic powder, and gravy mix, and pour over beef mixture. Cover and cook on low 7 to 9 hours, or on high for 4 to 5 hours. If desired, add oriental vegetables about 30 minutes before serving. Serve over rice or noodles.
