Ingredients:
1/4 cup Butter or margarine
1 lb Idaho Potatoes, peeled, grated and squeezed dry
1 large Onion, diced
1 medium Red or green bell pepper, seeded and diced
1/2 tsp Salt
1/8 tsp Freshly ground black pepper
Instructions:
In a 1 2-inch skillet over medium-high heat, melt the butter. Add
Idaho Potatoes, onion, and bell pepper and cook about 8 to 10
minutes, gently stirring the mixture every few minutes. Add the salt
and pepper: cook until the potatoes are well browned on both sides
and tender. (Makes 4 servings)
