Ingredients:
5 lb Sea salt
2 tsp Whole peppercorns
4 1/2 tbsp Brown sugar, firmly packed
1 1/2 tsp Juniper berries, dried
1 Bay leaf, dried, crumbled
6 Thyme, sprigs of, leavesonly
8 Cloves, whole
Instructions:
NOTE: This is for 25 lb s of any kind of meat. Mix well then crush or
pound in a mortar and use as Salt in brines or for dry Salting.
