Ingredients:
3 Eggs
1 cup Oil
2 cup Flour
1/4 tsp Baking powder
2 cup Sugar, brown or white
2 cup Zucchini, peeled and grated
1 tsp Salt
3 tsp Cinnamon
3 tsp Vanilla
Instructions:
Beat eggs, oil, sugar and zucchini. Sift dry ingredients together
and add to mixture. Add vanilla. Pour into 2 greased and floured
loaf pans. Bake at 350 degrees for 1 hour. Test tops by touching with
one finger before removing from oven. Freezes excellent.
