  LOW FAT APPLE WALNUT MUFFINS

Ingredients:
2 C. whole wheat pastry flour
1/2 tsp. salt
1-1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. allspice
3 eggs
1 C. buttermilk
1-2/3 C. apple juice concentrate
1/3 C. oat bran
2 C. apples, diced
1/2 C. walnuts, chopped
2 apples, sliced
Instructions:
Preheat oven to 350 degrees F. Let fruit juice concentrate thaw to a slushy consistency. In a medium-sized bowl, sift together flour, salt, baking soda, cinnamon, ginger, and allspice. Set aside. In a large bowl, whisk together eggs, buttermilk, and fruit juice concentrate. Whisk the flour mixture into the liquid, adding bran. Stir in diced apples and walnuts. Line a muffin tin with baking C.; divide batter evenly among C.. Top each muffin with an apple slice. Bake for 35 minutes.
