Ingredients:
2/3 C. pinto beans, cooked and drained
2/3 C. garbanzo beans, cooked and drained
1-1/2 C. green beans sliced, steamed
1/2 C. celery, diced
1/4 C. red onion, diced
1/4 C. pimientos, diced
1/4 C. parsley, chopped
2 Tbls. natural rice vinegar
1 Tbls. lemon juice
4 tsp. olive oil
1/4 tsp. salt
freshly ground pepper
lettuce leaves
Instructions:
In salad bowl combine all ingredients, except lettuce. Chill. Serve on lettuce leaves.
