Ingredients:
3 jalapeno peppers, pickled in vinegar, sliced and diced
1 oz. grated cheddar cheese
4 slightly beaten eggs
Instructions:
Arrange peppers in a nonstick, 10-inch pie plate. Cover with cheese. Pour eggs over cheese. Bake at 275 degrees F. for 40 minutes, or until set. Cut into wedges. Serve hot.
