  POTATO CASSEROLE

Ingredients:
2 C. potatoes, pared and sliced thin
1/2 to 3/4 C. milk
3 carrots, pared and sliced
1/2 can of creamed corn
1 lb. of ground beef
1/2 C. grated Cheddar or Colby cheese
salt and pepper to taste
Instructions:
Preheat oven to 350º. In a 1-1/2 qt casserole dish place sliced potatoes and milk, add salt and pepper; stir. Place pared and sliced carrots on top. Place in oven and bake for approximately 1 hour, or until potatoes are just about done. Sauté ground beef in a skillet until cooked, but not browned. When the potatoes are just about done, top with can of creamed corn, top with the sautéed ground beef, return to oven for 10 minutes or until corn is heated through. Top with grated cheese, return to oven until cheese has melted, about 5 minutes. Serves 4. Leftovers keep well, and you can even freeze them.
