  ONE POT DINNER RECIPE
  Category: Ground Beef
  Author: Ashley
  Date: 1/1/2007
  Hits: 387
Ingredients:
3 Tbsp. vegetable oil
1 sm. onion, chopped
1 lg. egg, lightly beaten
1 lb. ground beef
1/4 C. water
1/2 C. plain bread crumbs
1 1/2 tsp. onion powder
1 1/2 tsp. garlic salt
4 med. potatoes, scrubbed and sliced
20 oz. frozen crinkle cut carrots
Instructions:
Heat the oil in a skillet on medium-high heat. Reduce the heat to medium once oil is hot. Place the onion on the bottom of the pan. In a large bowl, mix the egg, beef, water, bread crumbs, onion powder and garlic salt. Press meat into the bottom of the bowl to form a rounded loaf. Invert the bowl to remove and place the loaf on top of the onion. Place the sliced potatoes around the loaf and the carrots atop the potatoes. Sprinkle the entire thing with additional seasonings, if desired. Cover and cook for about 30 minutes. Turn the meatloaf over and stir the vegetables. Cook covered for an additional 30 minutes. Additional water may be added also. Notes: For a more flavorful loaf, substitute beef or vegetable broth for the water in the recipe.
